Cookie Time with Chef Craig

The cookie is one of the all-time perfect snacks. Sweet and satisfying, ideal for pairing with a hot drink, and often conjuring up nostalgic memories of family recipes and holiday treats. The cookie is top-tier, make no mistake. It's always a good idea to have a batch ready and waiting in your biscuit jar for afternoon tea.

This recipe, from Café Vita et flores Sous Chef Craig, is a take on one of the most widely beloved of cookies, the good old choc chip. These choc chip cookies are not too rich (unless you decide to get fancy with your chosen variety of choc chips!), have a delectable crumb, and you can decorate them with any topping you please.

Chef Craig's chocolate chip cookies

Makes approximately 20 large cookies

Ingredients

200g butter, at room temperature

150g caster sugar

2 eggs

1 tsp vanilla essence (or extract if you want a stronger vanilla flavour)

400g plain flour, sifted

A pinch of bicarbonate soda

200g choc chips

Smarties, or other edible decorations (optional)

Method

1. Preheat the oven to 180C.

2. Add the sifted flour and bicarbonate soda into the wet mixture and loosely fold. Add in the chocolate chips and fold together until fully combined.

3. Roll dough together into balls – they can be large or small, but tablespoon-sized balls work best – and place on a lined baking tray. If you are adding smarties or other decorations, now is the time!

4. Bake for 12 minutes, or until the cookies have flattened and become golden brown.
